CORNBREAD

Dry Ingredients

  • 1 C flour
  • 3/4 C corn meal
  • 3-4 TBS sugar
  • 1 TBS baking powder
  • 1 tsp salt

Wet Ingredients

  • 1 egg,
  • 2/3 C milk
  • 1/3 C butter, melted

Directions

  1. Preheat oven to 425.
  2. Mix dry ingredients together.
  3. Beat egg in a separate bowl and add milk.
  4. Melt the butter just before you're ready to mix it all together. Make a well in the dry ingredients, add the milk and eggs and combine. Add the melted butter and mix until there are no dry patches. For best results, be sure not to mix it too thoroughly.
  1. Transfer to greased pan or muffin tins. I used mini muffin tins (see picture above) and loved them.
  2. Bake for about 20 min. Depending on what you're baking with it may be a little less time. Stick a toothpick or fork into the center of one--if it comes out clean then you're done.
  3. Cool for 5-10 min then transfer to baking rack to cool completely.
